  • 4 slices Sourdough bread
  • 4 ounces Aged cheddar cheese
  • 4 ounces Gruyere cheese
  • 2 tablespoons Unsalted butter, softened
  • 2 teaspoons Dijon mustard
  • 1 Yellow onion, thinly sliced
  • 1 tablespoon Olive oil
  • 1 teaspoon Fresh thyme leaves (optional)
  • 1 pinch Kosher salt
  • 1 pinch Black pepper

Directions

Step 1

Heat a skillet over medium heat. Add the olive oil and sliced onion, along with a pinch of kosher salt and black pepper. Cook, stirring occasionally, for 10-12 minutes or until the onions are golden and caramelized. If using, stir in the thyme leaves during the last minute of cooking. Remove from heat and set aside.

Step 2

Spread a thin layer of softened butter on one side of each slice of sourdough bread. On the unbuttered side of two slices, spread 1 teaspoon of Dijon mustard evenly.

Step 3

Layer 2 ounces of aged cheddar and 2 ounces of Gruyere cheese on top of the Dijon mustard. Add a generous spoonful of caramelized onions over the cheese.
