Ingredients

  • 8 slices sourdough bread
  • 8 slices cheddar cheese
  • 8 strips cooked bacon
  • 2 medium avocado
  • 1 tablespoon lemon juice
  • 4 tablespoons butter (softened)
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Cook the bacon strips in a skillet over medium heat until crispy. Remove and drain on a paper-towel-lined plate.

Step 2

Slice each avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork, then mix in lemon juice, salt, and black pepper to taste.

Step 3

Lay out 4 slices of sourdough bread on a clean surface. Spread an even layer of mashed avocado over each slice.

Step 4

Top each avocado-covered slice with 2 strips of cooked bacon and 2 slices of cheddar cheese.

Step 5

Place the remaining 4 slices of sourdough bread on top to make sandwiches.

Step 6

Spread a thin layer of softened butter on the outside of each sandwich, covering both the top and bottom slices of bread.

Step 7

Heat a large skillet or grill pan over medium heat. Place the sandwiches in the pan (work in batches if needed) and cook until the bottom is golden brown and the cheese begins to melt, about 3-4 minutes.

Step 8

Flip the sandwiches carefully and cook the other side until golden brown and the cheese is fully melted, another 3-4 minutes.

Step 9

Remove the sandwiches from the pan, let them rest for a minute, then slice each sandwich in half and serve warm.
