Ingredients

  • 4 slices sourdough bread
  • 120 grams sharp cheddar cheese
  • 1 tomato
  • 2 tablespoons unsalted butter
  • 1 tablespoon white miso paste
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • 0.25 teaspoons black pepper

Directions

Step 1

In a small bowl, mix the white miso paste, mayonnaise, lemon juice, and black pepper until smooth. Set aside.

Step 2

Slice the tomato into thin rounds, about 1/4 inch thick, and pat dry with a paper towel to remove excess moisture. This will prevent the sandwich from getting soggy.

Step 3

Spread the miso mixture evenly onto one side of each slice of bread.

Step 4

Layer two slices of bread with half of the cheddar cheese, followed by tomato slices, and then the remaining cheddar cheese. Top with the other slices of bread, miso side down.

Step 5

Heat a large skillet or griddle over medium heat. Add 1 tablespoon of butter to the pan and let it melt.

Step 6

Place the assembled sandwiches into the skillet and cook for 3-4 minutes, or until the bottom is golden brown and crispy. Press gently with a spatula to encourage even cooking.

Step 7

Flip the sandwiches, add the remaining tablespoon of butter to the pan, and cook the other side for another 3-4 minutes until golden brown and the cheese is melted.

Step 8

Remove the sandwiches from the skillet, let them cool for 1-2 minutes, then slice in half and serve immediately.
