Ingredients

  • 4 pieces catfish fillets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 3 medium (diced) tomatoes
  • 0.5 medium (diced) red onion
  • 1 small (minced) jalapeño
  • 2 tablespoons (chopped) cilantro
  • 1 medium (juiced) lime
  • 0.25 teaspoon salt (for salsa)

Directions

Step 1

Preheat your grill or grill pan to medium-high heat and lightly oil the grates.

Step 2

Combine olive oil, garlic powder, paprika, ground cumin, salt, and black pepper in a small bowl to form a marinade.

Step 3

Brush the marinade evenly over both sides of the catfish fillets.

Step 4

Place the catfish fillets on the preheated grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

Step 5

While the fish is cooking, prepare the salsa. In a mixing bowl, combine the diced tomatoes, diced red onion, minced jalapeño, chopped cilantro, lime juice, and 1/4 teaspoon of salt.

Step 6

Taste the salsa and adjust seasonings as needed. Set aside until ready to serve.

Step 7

Once the catfish is done grilling, transfer it to a serving plate.

Step 8

Top each catfish fillet with a generous scoop of the homemade salsa and serve immediately.
