Ingredients

  • 4 pieces chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 3 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoons ground allspice
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 medium (diced) pineapple
  • 1 medium (diced) red bell pepper
  • 0.5 medium (diced) red onion
  • 1 small (seeded and minced) jalapeño
  • 0.25 cups (chopped) cilantro
  • 2 tablespoons (for salsa) lime juice
  • 0.25 teaspoons (for salsa) salt

Directions

Step 1

In a small bowl, whisk together olive oil, lime juice, minced garlic, ground cumin, paprika, ground allspice, honey, salt, and black pepper to make the marinade.

Step 2

Place the chicken breasts in a large resealable bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.

Step 3

Preheat your grill to medium-high heat and lightly oil the grates.

Step 4

Remove the chicken breasts from the marinade, allowing the excess to drip off, and place them on the grill. Cook for 6-8 minutes on each side or until the chicken is no longer pink in the center and has an internal temperature of 165°F (74°C).

Step 5

While the chicken is grilling, prepare the pineapple salsa. In a mixing bowl, combine diced pineapple, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt. Stir well to combine.

Step 6

Remove the grilled chicken from the grill and let it rest for 5 minutes before serving.

Step 7

Serve the grilled chicken topped with the pineapple salsa. Enjoy!
