Ingredients

  • 4 large eggs
  • 2 tablespoons milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons butter
  • 8 slices of bread
  • 4 slices cheddar cheese
  • 4 slices cooked bacon
  • 1 cup baby spinach
  • 1 tomato
  • 2 tablespoons mayonnaise
  • 1 tablespoon vegetable oil

Directions

Step 1

In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.

Step 2

Heat a skillet over medium heat and melt 1 tablespoon of butter. Pour in the egg mixture and gently scramble until just set. Remove from heat and set aside.

Step 3

Thinly slice the tomato and prepare all other toppings (cheese, bacon, and spinach) for easy assembly.

Step 4

Spread mayonnaise evenly on one side of each bread slice. Lay out the bread slices with the mayonnaise side facing out.

Step 5

On four of the bread slices (un-mayonnaised side up), layer equal portions of scrambled eggs, a slice of cheddar cheese, a slice of bacon, a few spinach leaves, and a tomato slice.

Step 6

Top each sandwich with another slice of bread, with the mayonnaised side facing out.

Step 7

In a large nonstick skillet or grill pan, heat 1 tablespoon of oil over medium heat. Place sandwiches into the pan and cook for 2-3 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.

Step 8

Repeat with remaining sandwiches, adding additional oil if necessary.

Step 9

Slice sandwiches in half and serve warm.
