Ingredients

  • 2 fish Whole branzino, cleaned and scaled
  • 1 lemon Lemon, thinly sliced
  • 4 sprigs Fresh rosemary sprigs
  • 4 sprigs Fresh thyme sprigs
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 4 cloves Garlic cloves, thinly sliced
  • 2 tablespoons Parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your grill to medium-high heat, around 400°F (200°C).

Step 2

Rinse the branzino under cold water and pat dry with paper towels. Make sure the cavity of the fish is clean.

Step 3

Brush the outside and inside cavity of each branzino with olive oil and season with salt and black pepper.

Step 4

Stuff each fish cavity with lemon slices, rosemary sprigs, thyme sprigs, and a few slices of garlic.

Step 5

Once the grill is heated, place the fish directly on the grill grates. Cook for 6-7 minutes on one side until the skin is crispy and the fish easily releases from the grates.

Step 6

Carefully flip the fish using tongs and grill for an additional 6-7 minutes on the other side until the fish is opaque and flakes easily with a fork.

Step 7

Remove the fish from the grill and let it rest for a couple of minutes.

Step 8

Garnish with chopped parsley, if desired, and serve immediately with additional lemon wedges on the side.
