Ingredients

  • 1 can (15 oz) Black beans
  • 0.5 cup Panko breadcrumbs
  • 1 Egg
  • 1 teaspoon Garlic powder
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Shredded Mexican cheese blend
  • 4 Large flour tortillas
  • 2 tablespoons Olive oil
  • 0 Optional toppings (salsa, sour cream, guacamole, etc.)

Directions

Step 1

Drain and rinse the black beans. Place them in a medium mixing bowl and mash with a fork or potato masher until mostly smooth but still slightly chunky.

Step 2

Add the panko breadcrumbs, egg, garlic powder, chili powder, cumin, salt, and black pepper to the mashed beans. Mix until thoroughly combined.

Step 3

Form the mixture into 4 small patties that are about 4 inches in diameter. Set aside.

Step 4

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the black bean patties for 3-4 minutes on each side until golden brown, then remove from the skillet and set aside.

Wipe out the skillet and heat it over medium heat. Lay one of the tortillas flat in the skillet.

Sprinkle 1/4 cup of shredded cheese onto one half of the tortilla. Place a cooked black bean patty on top of the cheese, then sprinkle another 1/4 cup of shredded cheese over the patty.

Step 7

Fold the tortilla in half so it forms a semicircle. Press gently with a spatula to secure the filling.

Cook the quesadilla for 2-3 minutes on each side, until the tortilla is golden brown and crispy and the cheese is melted.

Repeat the process with the remaining tortillas, patties, and cheese.

Step 10

Remove the quesadillas from the skillet and let them cool slightly. Using a sharp knife or pizza cutter, cut each quesadilla into wedges.

Step 11

Serve with optional toppings such as salsa, sour cream, or guacamole.
