Ingredients

  • 4 medium-sized beets
  • 4 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoons ground cinnamon
  • 1 tablespoon honey
  • 2 tablespoons lemon juice
  • 2 tablespoons (chopped) fresh cilantro
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 clove (minced) garlic
  • 4 tablespoons yogurt (optional, for serving)

Directions

Step 1

Wash and scrub the beets thoroughly to remove any dirt. Trim off the top and bottom ends, but leave the skin on.

Step 2

Preheat your grill to medium-high heat.

Step 3

Toss the beets with 2 tablespoons of olive oil and 0.5 teaspoons of salt. Wrap each beet individually in aluminum foil to retain moisture while grilling.

Step 4

Place the wrapped beets on the grill and cook for 35-40 minutes, turning occasionally, until tender when pierced with a fork.

Step 5

While the beets are grilling, prepare the Moroccan dressing. In a small bowl, whisk together the remaining 2 tablespoons of olive oil, ground cumin, paprika, ground cinnamon, minced garlic, honey, lemon juice, remaining salt, and black pepper.

Step 6

Once the beets are cooked, allow them to cool for 5-10 minutes. Unwrap them and gently peel off the skins using a paper towel or clean hands.

Step 7

Slice the peeled beets into wedges or rounds, depending on your presentation preference.

Step 8

Drizzle the dressing over the sliced beets and toss gently to coat evenly.

Step 9

Sprinkle the chopped cilantro over the dressed beets for a fresh, herbal finish.

Step 10

Serve warm or at room temperature. If desired, add a dollop of yogurt on the side for a creamy contrast.
