Ingredients

  • 8 oz Beef steak (ribeye or sirloin)

  • 2 tbsp Olive oil
  • 2 large Yellow onions, thinly sliced
  • 2 tbsp Butter
  • 1 tsp Granulated sugar
  • 3 oz Blue cheese crumbles
  • 2 slices French or ciabatta bread, sliced in half
  • 1 cup Arugula (optional)

Directions

Step 1

Season the beef steak with salt and black pepper on both sides. Let it sit at room temperature for 10 minutes while you prepare the onions.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and cook for 5 minutes, stirring occasionally.

Reduce the heat to low, add butter and granulated sugar to the onions, and cook for another 15-20 minutes until the onions are deeply caramelized and golden. Stir occasionally to prevent sticking.
