  • 0.5 tsp black pepper
  • 1.5 cups sweet corn (fresh or canned)
  • 0.5 cup red onion, finely diced
  • 1 cup cherry tomatoes, halved
  • 0.25 cup cilantro, chopped
  • 2 tbsp lime juice (freshly squeezed)
  • 4 cups romaine lettuce, chopped
  • 1 avocado, sliced
  • 1 tbsp chipotle peppers in adobo sauce
  • 0.25 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tsp honey
  • 1 tbsp water

Directions

Step 1

Prepare the beef by rubbing it with 2 tablespoons of olive oil, garlic powder, smoked paprika, ground cumin, salt, and black pepper. Let it marinate for 10-15 minutes while you prepare the other components.
