Ingredients

  • 4 pieces Chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried oregano
  • 1 teaspoon Garlic powder
  • 8 ounces Goat cheese
  • 8 leaves Fresh basil leaves
  • 2 large Fresh tomatoes
  • 2 tablespoons Balsamic glaze

Directions

Step 1

Preheat your grill to medium-high heat, about 375-400°F (190-200°C).

Step 2

Brush the chicken breasts with olive oil on both sides. Season them evenly with salt, black pepper, dried oregano, and garlic powder.

Step 3

Place the chicken breasts on the grill. Cook for 6-8 minutes per side or until the internal temperature reaches 165°F (74°C).

Step 4

While the chicken is grilling, slice the tomatoes into thin rounds and set them aside. Also, prepare the goat cheese by crumbling or slicing it into portions for each chicken breast.

Step 5

Once the chicken is fully cooked, reduce the heat to low. Top each chicken breast with 2 ounces of goat cheese and a couple of slices of tomato.

Step 6

Close the grill lid for 1-2 minutes to allow the goat cheese to soften and the tomatoes to warm slightly.

Step 7

Carefully remove the chicken from the grill and plate each piece. Garnish each serving with 2 fresh basil leaves.

Step 8

Drizzle balsamic glaze over the finished chicken for an extra pop of flavor if desired.

Step 9

Serve immediately with your choice of side dishes such as grilled vegetables, salad, or rice.
