Ingredients

  • 1.5 pounds baby potatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 8 pieces wooden skewers (soaked in water for 30 minutes)

Directions

Step 1

Rinse the baby potatoes thoroughly and place them in a medium-sized pot. Cover the potatoes with water and bring to a boil over medium heat. Cook for 10-15 minutes, or until they are just tender but not falling apart. Drain and allow to cool slightly.

Step 2

While the potatoes are cooling, prepare the marinade by whisking together olive oil, minced garlic, lemon juice, dried oregano, paprika, salt, and black pepper in a large mixing bowl.

Step 3

Add the slightly cooled potatoes to the bowl with the marinade. Toss gently to ensure the potatoes are evenly coated. Cover and let marinate for at least 20 minutes.

Step 4

Preheat your grill to medium-high heat (about 375–400°F).

Step 5

Thread the marinated baby potatoes onto the soaked wooden skewers, leaving a little space between each potato for even grilling.

Step 6

Place the potato skewers on the preheated grill. Close the lid and cook for 4-5 minutes per side, turning occasionally, until the potatoes are golden brown and have grill marks.

Step 7

Once cooked, transfer the kabobs to a serving platter and sprinkle with fresh parsley for garnish.

Step 8

Serve warm and enjoy!
