Ingredients

  • 4 heads Baby bok choy
  • 2 cups Cherry tomatoes
  • 3 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 2 cloves Garlic
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Red pepper flakes (optional)

Directions

Step 1

Wash the baby bok choy thoroughly and cut each head lengthwise into halves.

Step 2

Rinse the cherry tomatoes and pat them dry.

Step 3

Peel and mince the garlic cloves.

Step 4

In a large bowl, combine olive oil, balsamic vinegar, minced garlic, salt, black pepper, and red pepper flakes (if using). Whisk the mixture together to form a marinade.

Add the baby bok choy halves and cherry tomatoes to the bowl. Toss gently to coat the vegetables evenly in the marinade.

Preheat a grill or grill pan over medium heat.
