  • 2 large aubergines (eggplants)
  • 60 ml olive oil
  • 1 teaspoon salt

  • 10 leaves fresh basil leaves
  • 15 grams fresh parsley
  • 2 cloves garlic cloves
  • 30 ml lemon juice
  • 15 ml red wine vinegar
  • 0.25 teaspoon chili flakes

Directions

Step 1

Preheat the grill to medium-high heat.

Slice the aubergines into 1 cm thick rounds.

Brush both sides of the aubergine slices with 30 ml of olive oil and season with salt and black pepper.

Place the aubergine slices on the preheated grill in a single layer.
