Ingredients

  • 500 g asparagus spears
  • 2 tbsp olive oil

  • 100 g unsalted butter
  • 50 g crumbled blue cheese
  • 2 red onions, finely chopped
  • 2 tbsp brown sugar
  • 3 tbsp red wine vinegar
  • 2 tbsp water
  • 1 tsp thyme leaves (optional)

Directions

Step 1

Wash the asparagus spears and trim the woody ends.

Drizzle the asparagus with olive oil and sprinkle with salt and black pepper. Toss to coat evenly. Set aside.
