Ingredients

  • 1 pound asparagus
  • 4 medium carrots
  • 3 tablespoons olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 cups grapefruit juice
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • 1 tablespoon fresh dill
  • 1 clove garlic
  • 1 teaspoon grapefruit zest

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Step 2

Wash the asparagus and carrots thoroughly. Trim the woody ends of the asparagus and peel the carrots. Cut the carrots in half lengthwise if they are thick.

Step 3

In a large bowl, toss the asparagus and carrots with 2 tablespoons of olive oil, salt, and black pepper until evenly coated.

Step 4

Place the vegetables on the preheated grill. Cook for 7-8 minutes, turning occasionally, until tender and slightly charred. Remove from grill and set aside.

Step 5

While the vegetables are grilling, prepare the grapefruit dill sauce. In a small mixing bowl, combine grapefruit juice, the remaining 1 tablespoon of olive oil, honey, dijon mustard, minced garlic, and grapefruit zest. Whisk together until smooth.

Step 6

Finely chop the fresh dill and stir it into the sauce.

Step 7

To serve, arrange the grilled asparagus and carrots on a platter. Drizzle the grapefruit dill sauce over the top or serve it on the side for dipping.

Step 8

Garnish with extra fresh dill if desired and enjoy immediately.
