Preheat your oven to 375°F (190°C).
Clean the button mushrooms gently with a damp paper towel and remove the stems. Set the caps aside and finely chop the stems.
In a skillet, heat the olive oil over medium heat. Add the chopped mushroom stems and minced garlic. Sauté for 3-4 minutes until softened and fragrant. Remove from heat.
In a medium mixing bowl, combine the sautéed mushroom stems, cream cheese, cooked and crumbled Italian sausage, grated Parmesan cheese, 2 tablespoons of chopped parsley, breadcrumbs, salt, and black pepper. Mix until well combined.
