Ingredients

  • 12 oz rotini pasta
  • 1.5 cups cherry tomatoes
  • 1 large cucumber
  • 1 red bell pepper
  • 0.75 cups black olives
  • 0.5 medium red onion
  • 0.75 cups feta cheese, crumbled
  • 0.25 cups extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tsp dijon mustard
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

Step 2

While the pasta cooks, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, thinly slice the red onion, and drain and slice the black olives if they are whole.
