Ingredients

  • 500 grams Shrimp (peeled and deveined)
  • 3 tablespoons Olive oil
  • 1 large Yellow onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 400 grams Crushed tomatoes (canned)
  • 1 tablespoon Tomato paste
  • 100 milliliters Dry white wine
  • 0.5 teaspoons Red chili flakes (optional)
  • 1 teaspoon Dried oregano
  • 2 tablespoons Fresh parsley (chopped)
  • 1 tablespoon Fresh dill (chopped)
  • 100 grams Feta cheese (crumbled)
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 4 pieces Lemon wedges (optional for serving)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the chopped onion and sauté for 3-4 minutes until translucent.

Step 3

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 4

Add the tomato paste to the skillet and stir well to combine.

Step 5

Pour in the crushed tomatoes and white wine, then add the red chili flakes (if using), dried oregano, salt, and black pepper. Stir everything together.

Step 6

Bring the sauce to a gentle simmer and let it cook for 10-12 minutes, stirring occasionally, until it thickens slightly.

Step 7

While the sauce is simmering, season the shrimp with a pinch of salt and pepper.

Step 8

Add the shrimp to the skillet, nestling them into the sauce. Cook for 3-4 minutes, turning once, until the shrimp are pink and fully cooked.

Step 9

Sprinkle the crumbled feta cheese evenly over the top of the skillet.

Step 10

Cover the skillet with a lid and let it cook for another 2-3 minutes to allow the feta to soften and meld into the dish.

Step 11

Remove the skillet from the heat and garnish with fresh parsley and dill.

Step 12

Serve hot with crusty bread or over rice, and optionally with a lemon wedge on the side for a bright finish.
