Ingredients

  • 2 lbs Pork shoulder (cut into 2-inch chunks)
  • 0.5 cup Soy sauce
  • 0.25 cup Lime juice (or calamansi juice for authenticity)
  • 2 tbsp Brown sugar
  • 6 cloves Garlic (minced)
  • 1 medium White onion (chopped)
  • 2 leaves Bay leaves
  • 1 tsp Ground black pepper
  • 2 tbsp Cooking oil
  • 2 cups Water
  • 4 pieces Hard-boiled eggs (peeled, optional)
  • 0 Salt (to taste)

Directions

Step 1

In a large bowl, combine the soy sauce, lime juice (or calamansi juice), and half of the minced garlic. Add the pork shoulder chunks to the bowl and marinate for at least 30 minutes (or up to 8 hours in the refrigerator for more flavor).

Step 2

Heat the cooking oil in a large pot or deep skillet over medium heat. Add the chopped onions and the remaining minced garlic. Sauté until fragrant and the onions become translucent, about 3-4 minutes.

Step 3

Remove the pork from the marinade, reserving the marinade for later use. Add the pork chunks to the pot and brown them on all sides, about 5-7 minutes.

Step 4

Once the pork is browned, pour in the reserved marinade, water, and brown sugar. Stir to combine, ensuring the sugar dissolves into the liquid.

Step 5

Add the bay leaves and ground black pepper to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1 to 1.5 hours, or until the pork is tender and the flavors have melded together. Stir occasionally and add more water if needed to prevent the sauce from drying out.

Step 6

If using hard-boiled eggs, add them to the pot during the last 10-15 minutes of cooking to allow them to absorb the flavor of the sauce.

Step 7

Taste the sauce and adjust seasoning with salt to your preference. The sauce should be slightly sweet, savory, and aromatic.

Step 8

Serve Greg's Pork Asado hot over steamed rice, making sure to spoon some of the sauce over the dish. Enjoy!
