  • 1 cup chicken broth
  • 1.5 cups, shredded Monterey Jack cheese
  • 3 tablespoons, chopped fresh cilantro
  • 2 cups cooked rice
  • 4 for serving lime wedges

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, and smoked paprika.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove and set aside on a plate.

Step 3

In the same skillet, add the diced onion, red bell pepper, jalapeño, and garlic. Sauté for 3-4 minutes, or until the vegetables are softened and aromatic.
