  • 1 large Red bell pepper

  • 0.25 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 2 cups Tomato juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Fresh basil
  • 1 tablespoon Lemon juice

Directions

Step 1

Wash all vegetables thoroughly under cold running water.

Step 2

Core and roughly chop the tomatoes, keeping their juices. Peel the cucumber and cut into chunks. Remove the seeds from the red bell pepper and chop. Dice the red onion into small pieces.
