  • 0.5 cup creamy peanut butter
  • 0.25 cup unsalted butter, melted
  • 0.75 cup brown sugar
  • 0.25 cup granulated sugar
  • 2 whole large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.25 cup chopped peanuts (optional)
  • 0.5 cup chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, mash the ripe bananas until smooth with a fork or potato masher.

Step 3

Add the creamy peanut butter, melted butter, brown sugar, and granulated sugar to the bananas. Mix until well combined.

Step 4

Stir in the eggs and vanilla extract, mixing until the batter is smooth.

If using, gently fold in the chopped peanuts and/or chocolate chips.

Step 7

Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Step 8

Bake in the preheated oven for 55–60 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the banana bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Slice and enjoy your Greeny's Peanut Butter Banana Bread as is, or lightly toasted with a dollop of extra peanut butter!
