Ingredients

  • 2 pounds beef chuck, cubed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 3 medium potatoes, cubed
  • 3 celery stalks, sliced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 2 tablespoons all-purpose flour
  • 0.25 cup water
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the beef cubes with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Brown the beef in batches, ensuring not to overcrowd the pot. Remove the beef and set it aside.

Step 3

Add the remaining tablespoon of olive oil to the pot. Sauté the onion for 3-4 minutes until softened, then add the garlic and cook for an additional minute.

Step 4

Stir in the carrots, potatoes, and celery. Cook for 5 minutes, stirring occasionally.

Step 5

Add the browned beef back to the pot. Pour in the beef broth, tomato paste, and Worcestershire sauce. Stir to combine.

Step 6

Add the thyme, rosemary, and bay leaf. Bring the mixture to a boil, then reduce the heat to low. Cover with a lid and let the stew simmer for 2 hours, stirring occasionally.

Step 7

In a small bowl, whisk together the flour and water to form a slurry. Stir the slurry into the stew to thicken the sauce. Cook for an additional 30 minutes.

Step 8

Add the frozen peas in the last 10 minutes of cooking.

Step 9

Remove the bay leaf before serving. Garnish the stew with fresh parsley, if desired.

Step 10

Serve hot with crusty bread or over rice for a complete meal.
