Ingredients

  • 6 medium-sized Russet potatoes
  • 6 tablespoons Unsalted butter
  • 0.25 cup All-purpose flour
  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 2 cups Shredded sharp cheddar cheese
  • 0.5 cup Grated Parmesan cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 cup Breadcrumbs
  • 2 tablespoons Chopped fresh parsley
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray.

Step 2

Peel the Russet potatoes and slice them into 1/4-inch thick rounds. Set the potatoes aside in a bowl of cold water to prevent them from browning.

Step 3

In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes to form a roux. Make sure the mixture is smooth and golden in color.

Step 4

Slowly add the milk and heavy cream to the roux, whisking constantly to avoid lumps. Cook the mixture for 3-5 minutes, until it thickens into a smooth sauce.

Step 5

Remove the saucepan from heat and stir in the sharp cheddar cheese, Parmesan cheese, salt, black pepper, and garlic powder. Mix until the cheese is completely melted and the sauce is smooth. Set aside.

Step 6

Drain the sliced potatoes and pat them dry with a clean towel. Arrange a layer of potato slices evenly across the bottom of the prepared baking dish.

Step 7

Pour a portion of the cheese sauce over the potato layer, spreading it evenly to coat. Repeat layering potatoes and sauce until all the ingredients are used, finishing with a layer of sauce on top.

Step 8

Sprinkle the breadcrumbs evenly over the top of the casserole. Cover the dish with foil and bake in the preheated oven for 40 minutes.

Step 9

Remove the foil and bake for an additional 20 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.

Step 10

Garnish with chopped parsley before serving. Serve the Greenbrier’s Potatoes hot and enjoy!
