Ingredients

  • 4 cups baby spinach
  • 1 cup feta cheese
  • 4 oz cream cheese
  • 2 cloves garlic
  • 1 large egg
  • 2 tbsp fresh dill
  • 2 stalks green onions
  • 2 sheets puff pastry sheets
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp sesame seeds

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 30 seconds until fragrant.

Step 3

Add the baby spinach to the skillet and cook for 2-3 minutes until wilted. Transfer the spinach to a bowl and allow it to cool slightly.

Step 4

In the same bowl as the spinach, add the feta cheese, cream cheese, chopped dill, chopped green onions, beaten egg, salt, and black pepper. Mix until fully combined.

Step 5

Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into a large circle (using a dinner plate as a guide, if necessary).

Step 6

Place one puff pastry circle on the prepared baking sheet. Spoon the spinach-feta filling onto the center of the circle, spreading it evenly but leaving about a 1.5-inch border around the edges.

Place the second puff pastry circle on top of the filling, pressing the edges to seal. Use a fork to crimp the edges decoratively.

Using a sharp knife, make radial cuts through the top of the ring, creating 12 spokes. Leave the center intact. Twist each segment gently to reveal the filling.
