  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Smoked paprika
  • 2 sprigs Fresh thyme
  • 1 cup Croutons (optional, for garnish)

Directions

Step 1

Dice the green tomatoes, peel and finely chop the onion, and mince the garlic cloves.

Step 2

Cut the country ham into small bite-sized pieces or strips.

Step 3

Heat the olive oil in a large soup pot over medium heat, then add the butter. Once melted, add the diced onions and cook until translucent, about 5 minutes.

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Add the diced green tomatoes to the pot and cook for 10 minutes, stirring occasionally, until they soften and release their juices.
