Ingredients

  • 1000 grams Green tomatoes
  • 800 grams Granulated sugar
  • 1 whole Lemon
  • 10 grams Fresh ginger
  • 1 whole Cinnamon stick
  • 120 milliliters Water

Directions

Step 1

Wash the green tomatoes thoroughly and cut them into small pieces (about 1 cm cubes). Discard any woody stems or blemished sections.

Step 2

Peel the lemon and ginger. Cut the lemon peel into thin strips, juice the lemon, and finely grate the ginger.

Step 3

In a large, heavy-bottomed pot, combine the green tomatoes, granulated sugar, lemon juice, lemon peel strips, grated ginger, and cinnamon stick.

Step 4

Add the water to the pot and stir everything gently to combine.

Step 5

Place the pot over medium heat and stir occasionally until the sugar dissolves completely and the mixture begins to simmer.

Step 6

Once simmering, lower the heat to medium-low and let the preserves cook uncovered for about 45-60 minutes, stirring occasionally. Skim off any foam that forms on the surface during cooking.

Step 7

The preserves are ready when the mixture thickens and reaches a jam-like consistency. To test, place a small spoonful onto a cold plate and allow it to cool for a minute. If the mixture holds its shape when you draw a line through it with your finger, it’s ready.

Remove the pot from heat and discard the cinnamon stick.

Carefully ladle the hot preserves into sterilized glass jars, leaving about 1 cm of space at the top. Seal the jars tightly with lids.

Allow the jars to cool to room temperature before storing them in the refrigerator or a cool, dark place. Properly sealed jars can be stored for up to 6 months; refrigerate after opening.
