Ingredients

  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder

  • 2 tablespoons matcha powder (green tea powder)

  • 1.75 cups granulated sugar
  • 4 pieces large eggs
  • 1 teaspoon vanilla extract
  • 1.25 cups whole milk
  • 8 ounces cream cheese, softened
  • 3 cups powdered sugar
  • 1 tablespoon matcha powder (for frosting)
  • 2 tablespoons heavy cream

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, then line the bottoms with parchment paper for easy release.

Step 2

In a medium bowl, whisk together the flour, baking powder, salt, and 2 tablespoons of matcha powder. Set this dry mixture aside.

Step 3

In a large bowl, beat the butter and sugar together with a hand or stand mixer at medium speed until light and fluffy, about 3 minutes.

Step 4

Add the eggs one at a time to the butter mixture, beating well after each addition. Then, mix in the vanilla extract.

Step 5

Gradually add the dry mixture to the wet mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined. Do not overmix.

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

Bake in the preheated oven for 25–30 minutes or until a toothpick inserted into the center of the cakes comes out clean.

Allow the cakes to cool in their pans for 10 minutes, then turn them out onto wire racks to cool completely.

To make the frosting, beat the cream cheese until smooth and creamy. Gradually add the powdered sugar, 1/2 cup at a time, beating well after each addition.

Add 1 tablespoon of matcha powder to the frosting and mix until fully incorporated. Gradually add the heavy cream while beating on low speed until the frosting reaches a spreadable consistency.

Once the cakes are completely cool, level the tops if necessary. Place one cake layer on a serving plate and spread a thick layer of matcha frosting on top.

Place the second cake layer on top of the frosted layer, then cover the entire cake with the remaining frosting. Smooth the frosting with an offset spatula for a polished finish.

Optionally dust the top of the cake with a light sprinkle of matcha powder for garnish.

Chill the cake for at least 30 minutes before slicing to let the frosting set. Slice, serve, and enjoy!
