Ingredients

  • 300 grams All-purpose flour
  • 10 grams Matcha green tea powder
  • 40 grams Granulated sugar
  • 1 teaspoon Salt
  • 7 grams Instant yeast
  • 150 milliliters Whole milk
  • 40 grams Unsalted butter (softened)
  • 1 large Egg

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, matcha green tea powder, and granulated sugar. Mix well to ensure the matcha is evenly distributed.

Step 2

Stir in the salt and instant yeast, keeping the yeast and salt on opposite sides of the bowl initially to avoid direct contact.

Step 3

Warm the milk to a lukewarm temperature (around 38°C or 100°F) and add it to the dry ingredients along with the egg. Mix until a rough dough forms.

Step 4

Knead the dough on a lightly floured surface for about 5 minutes, or until it begins to come together.

Add the softened butter to the dough and continue to knead for another 8-10 minutes, until the dough is smooth, elastic, and slightly tacky. You can also use a stand mixer with a dough hook attachment for this step.

Shape the dough into a ball and place it in a lightly greased bowl. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm, draft-free area for 1 hour, or until doubled in size.
