Ingredients

  • 1 lb frozen French fries
  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 jalapeño, diced (optional for spice)
  • 1 green bell pepper, diced
  • 1 zucchini, diced
  • 1 cup fresh or frozen peas
  • 2 4-oz cans canned green chilies
  • 2 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp salt
  • 0.5 tsp freshly ground black pepper
  • 0.5 cup fresh cilantro, chopped (plus more for garnish)
  • 1 cup grated sharp cheddar cheese
  • 0.5 cup sour cream (optional for topping)
  • 2 green onions, sliced (for garnish)

Directions

Step 1

Preheat your oven according to the instructions on the frozen French fries package.

Step 2

Spread the French fries in an even layer on a baking sheet and bake until golden brown and crispy. Set aside.

Step 3

While the fries bake, heat olive oil in a large skillet or pot over medium heat.

Step 4

Add the diced onion, garlic, and jalapeño (if using). Sauté until the onions are translucent and the mixture is fragrant, about 5 minutes.

Step 5

Stir in the diced green bell pepper and zucchini. Cook for another 5-7 minutes until the vegetables begin to soften.

Step 6

Add the peas, canned green chilies (with their liquid), and vegetable broth. Stir to combine.

Step 7

Season the mixture with ground cumin, ground coriander, salt, and black pepper. Bring to a simmer and let it cook uncovered for 15-20 minutes, stirring occasionally, until the liquid slightly thickens and the vegetables are tender.

Step 8

Stir in the chopped cilantro and remove the skillet from heat.

Step 9

In a large serving dish or a casserole dish, create a base layer with the crispy French fries.

Step 10

Pour the green chili mixture evenly over the fries.

Step 11

Sprinkle the grated sharp cheddar cheese over the top. Optionally, place the dish under the broiler for a few minutes to melt the cheese and make it bubbly.

Step 12

Garnish with additional chopped cilantro, sliced green onions, and a dollop of sour cream, if desired.

Step 13

Serve immediately while the fries are still hot and crispy, and enjoy your Green Spring Chili and French Fry Pie!
