Ingredients

  • 1 cup Dried wakame seaweed
  • 2 pieces Japanese cucumber (or English cucumber)
  • 1 teaspoon Salt
  • 4 tablespoons Rice vinegar
  • 1 tablespoon Soy sauce
  • 2 teaspoons Sugar
  • 1 teaspoon Sesame oil
  • 1 tablespoon Toasted sesame seeds

Directions

Step 1

Rehydrate the dried wakame seaweed by soaking it in cold water for 10 minutes, or according to package instructions. Once fully rehydrated, drain and gently squeeze out excess water. Set aside.

Step 2

Wash the Japanese cucumbers thoroughly. Using a mandoline or a sharp knife, slice the cucumbers into very thin rounds.

Step 3

Place the sliced cucumbers in a bowl and sprinkle with 1 teaspoon of salt. Massage the salt into the cucumbers and let sit for 5 minutes to draw out excess water. Afterward, rinse the cucumbers briefly under cold water and gently squeeze out any excess moisture.

Step 4

In a small bowl, whisk together rice vinegar, soy sauce, sugar, and sesame oil until the sugar is dissolved.

Step 5

In a large mixing bowl, combine the drained wakame seaweed and the prepared cucumber slices. Pour the dressing over the top and toss gently to combine.

Step 6

Sprinkle toasted sesame seeds over the salad for garnish and added flavor.

Step 7

Serve chilled as a side dish or an appetizer. Enjoy your refreshing Green Sea Salad!
