Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 cups Green salsa (salsa verde)
  • 1 tablespoon Olive oil
  • 2 tablespoons Cilantro, chopped
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 tablespoon Fresh lime juice
  • 1 jalapeño Optional: sliced jalapeños
  • 0 Cooked rice or tortillas (for serving)

Directions

Step 1

Season the chicken breasts with salt and ground black pepper on both sides.

Step 2

Heat the olive oil in a large skillet over medium heat.

Step 3

Add the chicken breasts to the skillet and sear for about 3-4 minutes per side, until golden brown. Remove from the skillet and set aside. The chicken does not need to be fully cooked at this stage.

In the same skillet, add the minced garlic and sauté for about 30 seconds, until fragrant.

Pour the green salsa (salsa verde) into the skillet and stir to combine with the garlic.

Return the chicken breasts to the skillet, spooning some of the green salsa over the top of each piece.
