Ingredients

  • 3 pieces corn tortillas
  • 2 tablespoons olive oil

  • 2 cups baby spinach
  • 1 cup queso fresco
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 0.5 teaspoons ground cumin
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Slice the corn tortillas into thin strips, about 1/4 inch wide.

Toss the tortilla strips with 1 tablespoon of olive oil and spread them out in a single layer on a baking sheet.
