  • 1 cup Basmati or long-grain rice
  • 2 cups Broccoli florets

  • 1 tablespoon Lime juice
  • 2 cups Vegetable broth
  • 2 tablespoons Unsalted butter
  • 1 cup Mozzarella cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Set aside.

Step 2

Bring a medium pot of water to a boil, then blanch the broccoli florets for 2 minutes until bright green and slightly tender. Drain and set aside.

Step 3

In a blender or food processor, combine the spinach, cilantro, parsley, garlic, lime juice, 0.5 teaspoon salt, and 0.25 teaspoon black pepper. Add 1/4 cup of vegetable broth and blend to create a smooth green paste.
