Ingredients

  • 2 large Green bell pepper
  • 2 small Garlic cloves
  • 120 grams Cream cheese
  • 60 grams Greek yogurt
  • 1 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Cayenne pepper
  • 1 tablespoon Fresh parsley

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Wash the green bell peppers thoroughly, then place them on a baking sheet lined with parchment paper.

Step 3

Roast the green bell peppers in the oven for 12-15 minutes, turning them halfway through, until they are blistered and slightly charred.

Step 4

Remove the roasted peppers from the oven and let them cool for 5 minutes. Once cool, peel off the skins and discard the seeds and stems.

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic cloves and sauté for 1-2 minutes until fragrant (do not let them burn).

Step 6

In a food processor, combine the roasted green peppers, sautéed garlic, cream cheese, Greek yogurt, lemon juice, salt, black pepper, and cayenne pepper.

Step 7

Pulse the mixture in the food processor until smooth and creamy.

Step 8

Transfer the dip to a serving bowl and garnish with freshly chopped parsley.

Step 9

Serve immediately with chips, crackers, or fresh vegetables, or refrigerate for up to 3 days in an airtight container.
