Ingredients

  • 2 large Tomatoes
  • 1 medium Onion
  • 1 inch Ginger
  • 3 Garlic cloves
  • 1 Green chili
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Salt
  • 1 cup Water
  • 2 tablespoons Fresh cilantro (optional, for garnish)

Directions

Step 1

Finely chop the onion, ginger, garlic cloves, and green chili. Set aside.

Step 2

Blend the tomatoes into a smooth puree using a blender or food processor. Keep it ready for use.

Step 3

Heat the vegetable oil in a deep pan or skillet over medium heat.

Step 4

Add cumin seeds to the hot oil and let them sizzle for about 30 seconds until fragrant.

Add the chopped onion, ginger, garlic, and green chili to the pan. Sauté for 3-4 minutes until the onion turns translucent and golden.

Pour in the tomato puree and cook for 5-6 minutes, stirring occasionally, until the mixture thickens and the oil starts to separate from the masala base.
