Ingredients

  • 1 cup Dried green peas
  • 2 tablespoons Olive oil
  • 1 medium-sized, chopped Onion
  • 3 minced Garlic cloves
  • 1 medium-sized, diced Carrot
  • 1 diced Celery stalk
  • 4 cups Vegetable stock
  • 2 cups Water
  • 1 Bay leaf
  • 1 teaspoon or to taste Salt
  • 0.5 teaspoon or to taste Black pepper
  • 2 tablespoons, chopped Fresh parsley
  • 1 tablespoon Fresh lemon juice

Directions

Step 1

Rinse the dried green peas thoroughly under cold water until the water runs clear. Soak them in water for 6-8 hours or overnight.

Step 2

Drain the soaked peas and set them aside.

Step 3

Heat olive oil in a large pot over medium heat.

Step 4

Add the chopped onion and cook for 3-4 minutes until softened.

Stir in the minced garlic, diced carrot, and diced celery. Cook for another 5 minutes, stirring occasionally.

Add the drained peas to the pot along with the vegetable stock, water, and bay leaf. Stir well to combine.

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 40-50 minutes, or until the peas are tender and starting to break down.
