Ingredients

  • 2 lbs Potatoes (starchy variety like Russet or Yukon Gold)
  • 6 stalks Green onions (scallions)
  • 1.5 cups Whole milk
  • 4 tablespoons Unsalted butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks. This will ensure even cooking.

Step 2

Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt to the water.

Step 3

Bring the water to a boil over high heat, then reduce the heat to medium and simmer the potatoes for 15-20 minutes, or until they are fork-tender.

Step 4

While the potatoes are cooking, thinly slice the green onions, including the white and green parts.

Step 5

In a small saucepan, heat the milk over medium heat until it is warm but not boiling. Add 2 tablespoons of butter and the sliced green onions to the milk, stirring occasionally. Let simmer gently for 5 minutes, then remove from heat.

Step 6

Drain the cooked potatoes and return them to the pot. Let them sit for 1-2 minutes to allow excess moisture to evaporate.

Step 7

Mash the potatoes using a potato masher or ricer until smooth. Gradually add the milk and green onion mixture to the potatoes, stirring gently with a wooden spoon or whisk until fully incorporated.

Step 8

Season the mashed potatoes with salt and black pepper to taste.

Step 9

Transfer the Green Onion Champ to a serving bowl, dot the top with the remaining 2 tablespoons of butter, and garnish with optional fresh parsley if desired.

Step 10

Serve warm as a comforting side dish to accompany roasted meats, stews, or grilled vegetables.
