Ingredients

  • 1 head green leaf lettuce
  • 6 ounces chorizo sausage
  • 1 large apple (preferably Granny Smith or Honeycrisp)
  • 0.5 red onion
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup toasted walnuts (optional)

Directions

Step 1

Wash and pat dry the green leaf lettuce. Tear it into bite-sized pieces and place them in a large salad bowl.

Step 2

Slice the chorizo sausage into thin rounds. Heat a skillet over medium heat and cook the chorizo for 5-7 minutes, stirring occasionally, until browned and crispy. Remove the chorizo from the skillet and drain on a paper towel-lined plate.

Step 3

Core and thinly slice the apple. You can leave the skin on for added texture and color. Add the apple slices to the salad bowl.

Step 4

Thinly slice half of a red onion and add it to the salad bowl along with the apple and lettuce.

Step 5

In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper to create the dressing.

Step 6

Drizzle the dressing over the salad and toss gently to combine all the ingredients evenly.

Step 7

Top the salad with the crispy chorizo and optional toasted walnuts for added crunch.

Step 8

Serve immediately and enjoy this perfectly balanced salad!
