Ingredients

  • 6 pieces large eggs
  • 1 piece ripe avocado
  • 3 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh chives
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon paprika (for garnish)
  • 3 pieces ham slices
  • 1 teaspoon olive oil

Directions

Step 1

Place the 6 eggs in a medium saucepan and cover them with water. Bring the pot to a boil, then reduce the heat to a simmer. Cook the eggs for 10 minutes.

Step 2

Once the eggs are cooked, transfer them to a bowl of ice water to cool for 5 minutes. Peel the eggs and slice them in half lengthwise.

Step 3

Carefully remove the yolks from the egg halves and place the yolks in a mixing bowl. Arrange the egg whites on a serving platter.
