Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the diced onion and cook for 3–4 minutes, stirring occasionally, until softened.
Add the minced garlic and cook for an additional 1 minute until fragrant.
Place the chicken breasts in the pot and sear them for 2–3 minutes on each side until lightly browned. They do not need to be fully cooked at this stage.
