Ingredients

  • 1 cup All-purpose flour
  • 1 cup Yellow cornmeal
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Whole milk
  • 0.25 cup Unsalted butter, melted
  • 1 large Egg
  • 0.5 cup Canned diced green chilies, drained
  • 0.5 cup Shredded cheddar cheese
  • 2 tablespoons Chopped fresh cilantro (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and grease or line a 12-cup muffin tin with paper liners.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, cornmeal, sugar, baking powder, and salt until well combined.

Step 3

In a separate medium bowl, whisk together the milk, melted butter, and egg until smooth.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients and gently fold them together using a spatula. Do not overmix; the batter should be slightly lumpy.

Step 5

Gently fold in the drained green chilies, shredded cheddar cheese, and cilantro (if using) until just incorporated.

Step 6

Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the tops are golden and a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm with butter, or store in an airtight container at room temperature for up to 3 days. Enjoy!
