Ingredients

  • 1 cup long-grain rice
  • 2 cups water
  • 0.5 teaspoons salt
  • 2 tablespoons butter
  • 0.5 cup green chilies, chopped (canned or fresh)
  • 1 cup shredded cheddar cheese
  • 0.25 cup heavy cream
  • 0.5 teaspoons garlic powder
  • 0.5 teaspoons onion powder
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming sticky.

Step 2

In a medium saucepan, combine the rice, water, and salt. Bring to a boil over medium-high heat.

Step 3

Once the water starts boiling, lower the heat to a simmer, cover the saucepan with a lid, and cook for 15-18 minutes until the rice is tender and the water has been absorbed.

Step 4

Remove the rice from heat and let it sit covered for 5 minutes to steam. Fluff the rice with a fork.

Step 5

In a large skillet or saucepan, melt the butter over medium heat.

Step 6

Add the chopped green chilies to the melted butter, stirring for 1-2 minutes until fragrant.

Step 7

Reduce the heat to low and stir in the shredded cheddar cheese, heavy cream, garlic powder, onion powder, and black pepper. Stir constantly until the cheese is fully melted and the mixture is creamy.

Step 8

Add the cooked rice to the skillet with the cheese mixture. Stir until all the rice is evenly coated with the cheesy sauce.

Step 9

Taste and adjust seasoning if necessary.

Step 10

Transfer the cheesy rice to a serving dish and garnish with freshly chopped cilantro if desired. Serve warm.
