  • 3 cups Cooked and shredded chicken
  • 4 tablespoons Butter
  • 1 medium Yellow onion, finely diced
  • 2 cloves Garlic, minced
  • 0.25 cup All-purpose flour
  • 2 cups Chicken broth
  • 0.5 cup Heavy cream
  • 1 cup Canned diced green chiles
  • 1 cup Frozen peas and carrots
  • 1 teaspoon Cumin
  • 0.5 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 sheets Pie crust dough, store-bought or homemade
  • 1 large Egg, beaten

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large skillet, melt the butter over medium heat. Add the diced onion and cook until softened, about 4-5 minutes. Stir in the minced garlic and cook for an additional 1 minute.

Step 3

Sprinkle the flour over the onion and garlic, stirring constantly to create a roux. Cook the roux for about 1-2 minutes to remove the raw flour taste.

Gradually whisk in the chicken broth until smooth. Reduce heat to medium-low and allow the mixture to thicken, about 5 minutes.

Stir in the heavy cream, green chiles, cumin, chili powder, salt, and black pepper. Let the sauce simmer for 2 minutes to meld the flavors.
