Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 2 4-ounce cans Canned diced green chiles
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 2 tablespoons Fresh cilantro, chopped
  • 1 cup Cheddar cheese, shredded
  • 1 whole Lime, cut into wedges

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, and garlic powder.

Step 2

Heat the olive oil in a large skillet over medium heat.

Step 3

Sear the chicken breasts in the skillet for 3-4 minutes per side until golden brown. They do not need to be fully cooked at this stage. Remove them from the skillet and set aside.

In the same skillet, add the chopped onion and cook for 2-3 minutes until softened.

Add the minced garlic and cook for another 30 seconds until fragrant.

Stir in the diced green chiles and chicken broth, scraping up any browned bits from the bottom of the pan.
