Ingredients

  • 1 cup green chiles (roasted and peeled)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 4 large eggs
  • 1 cup half-and-half
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon ground cumin
  • 1 pre-made pie crust (unbaked)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the pre-made pie crust in a 9-inch pie pan and press it gently into the edges. Trim the excess crust around the edges and crimp as desired.

Step 3

Scatter the roasted green chiles evenly over the bottom of the pie crust.

Step 4

In a medium bowl, combine the Monterey Jack cheese and sharp cheddar cheese. Sprinkle the cheese mixture evenly over the green chiles.

Step 5

In a separate mixing bowl, whisk together the eggs, half-and-half, flour, salt, black pepper, and ground cumin until smooth and well combined.

Step 6

Slowly pour the egg mixture over the cheese and green chiles in the pie crust, ensuring it spreads evenly.

Step 7

Carefully transfer the pie to the preheated oven and bake for 35–40 minutes, or until the top is golden brown and the filling is set. A knife inserted into the center should come out clean.

Step 8

Remove the pie from the oven and let it rest for at least 10 minutes before slicing.

Step 9

Slice and serve warm. This Green Chile Cheese Pie pairs wonderfully with a fresh salad or a dollop of sour cream on top.
