Ingredients

  • 4 units Green chiles, roasted and diced
  • 1 cup Cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 4 ounces Cream cheese, softened
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Tortilla chips, crushed
  • 2 units Eggs
  • 0.5 cup All-purpose flour
  • 2 cups Vegetable oil, for frying

Directions

Step 1

Roast the green chiles over an open flame or under a broiler until the skins are charred. Place them in a sealed plastic bag for 10 minutes to steam, then peel off the skins. Remove the seeds and dice the chiles.

Step 2

In a large mixing bowl, combine the diced green chiles, shredded cheddar cheese, shredded Monterey Jack cheese, softened cream cheese, garlic powder, onion powder, cumin, salt, and black pepper. Mix until the ingredients form a cohesive filling.

Step 3

Shape the mixture into small 1-inch balls using your hands. Place them on a parchment-lined baking sheet and refrigerate for 15 minutes to firm up.

Step 4

Prepare a breading station with three shallow dishes: one containing the flour, one with beaten eggs, and the last with crushed tortilla chips.

Step 5

Dip each chilled chile ball into the flour, then into the beaten eggs, and finally coat it with crushed tortilla chips. Repeat for all the balls.

Step 6

Heat the vegetable oil in a deep skillet or saucepan to 350°F (175°C). Fry the breaded chile bites in small batches for 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Step 7

Serve the green chile bites warm with your favorite dipping sauce, such as ranch or a spicy aioli.
