Ingredients

  • 500 grams fresh green beans
  • 2 tablespoons olive oil
  • 1 tablespoon whole grain mustard
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, ground
  • 0.25 teaspoon crushed red pepper flakes (optional)
  • 1 liter water
  • 10 cubes ice

Directions

Step 1

Wash the green beans thoroughly and trim off the ends.

Step 2

Bring 1 liter of water to a boil in a large pot with a pinch of salt.

Step 3

Blanch the green beans by adding them to the boiling water and cooking for 3-4 minutes until they are bright green and slightly tender.

Step 4

Prepare a bowl of ice water while the beans cook.

Step 5

Immediately transfer the blanched green beans to the ice water to stop the cooking process and preserve their vibrant color. Let them cool for 2-3 minutes, then drain and pat dry.

Step 6

In a large skillet, heat the olive oil over medium heat.

Step 7

Add the minced garlic to the skillet and sauté for 30 seconds until fragrant, being careful not to burn it.

Step 8

Stir in the whole grain mustard, lemon juice, salt, black pepper, and optional red pepper flakes. Mix well to form a light sauce.

Step 9

Add the green beans to the skillet and toss to coat them evenly in the mustard dressing. Cook for another 2-3 minutes until heated through.

Step 10

Taste and adjust seasoning as needed.

Step 11

Serve warm or at room temperature as a flavorful side dish.
